Undhiu is a speciality dish from the Western Indian state of Gujarat. Though Gujarati food changes stongly in character as one move from the coastal regions to the drier, semi-arid areas in the northern or the western parts of the state, each province has its own special preparation of this favourite.
A large variety of winter vegetables are skilfully combined with baked chick pea flour fritters (koflas) and greens and then garnished with freshly grated coconut. The spices are unique and the result fabulous. Undhiu is best served with the traditional white rice and hot chapattis. |
